Champlain Valley Creamery is a small scale cheesemaking operation in Vermont. After a year of making farmstead Vermont cheddar at Shelburne Farms, owner and cheesemaker, Carleton Yoder struck out on his own and started his own Creamery.  Their cheese is organic and made by hand in small batches in a solar powered processing facility.
